Hays man hopes business will be smoking

A new barbecue trailer that serves Hays and Plainville is open for hungry visitors.

Rockin' H BBQ, owned by Jesse and Sarah Holloway, stops in Hays in Ashley Furniture HomeStore's parking lot, 2702 Vine, from 11:30 a.m to 7 p.m. Tuesdays and Fridays.

It visits J-J Auto Sales in Plainville, 312 N. Washington, Wednesdays during the same hours.

The menu is full of the Hays couple's recipes, and the sweet, vinegar-based barbecue is a blend of the Carolina and Kansas City styles.

The two considered setting up a restaurant, but the trailer allows more flexibility.

"Just to be more mobile. We want to do fairs, festivals and stuff like that," Jesse said.

Brisket, pulled pork, smoked turkey, sausage and ribs are prepared on the rotisserie smoker that can cook up to 500 pounds of meat.

One specialty is a baked potato with beans, meat, cheese and chipotle sour cream, and BBQ nachos also are available. Sarah's jalapeno mustard sauce goes well with pork, she said.

The two have catered weddings, and they decided to expand their services.

"It's a dream come true," Jesse said. "I've wanted to do this forever, and my wife's always seemed to follow along with my crazy ideas. It's really happening."

Sarah said Jesse cooks while she does much of the planning, and she has suggested recipes. Sarah works at Rooks County Health Center, but she wants to cook and contribute more to the business.

Working together as a couple adds to the entrepreneurial experience,

"It's really nice to know we have each other's backs, and we're a really good team," she said.
