Ellis eatery will offer taste of Cancun

With Cancun Mexican Grill a success since it opened in September at 1011 Elm, it's time for another expansion for the family-owned business.

The Miguel Lopez family will open its ninth Mexican restaurant in Ellis at the former Alloway's Family Restaurant building at 105 W. Second. Building remodeling started three weeks ago, and the restaurant, also called Cancun Mexican Grill, will open its doors in approximately two months.

Maria Lopez, who manages the Hays restaurant, will take over management of the Ellis eatery, which will have the same menu and employ approximately a half-dozen people. She has high hopes, based on the popularity of the Hays restaurant.

"So far, that's my expectations," she said with a laugh. "Hopefully, that's going to happen."

Maria Lopez managed a family restaurant for the first time when she took over the Hays location.

"Everything has been positive," she said. "I can tell my whole family likes it. Everybody kind of made us so welcome here. I can't complain about anything; really doing good."

Lopez will be commuting from Hays to Ellis to manage the restaurant.

She likes the location of the restaurant in Ellis near Interstate 70.

"I found out the building was available," she said. "I really like the town."

Ellis residents are eager for the restaurant to open, Lopez said.

"There's some people starting to hear about it," she said. "They like the idea of a Mexican restaurant in town."
